Black Eyed Bean Salad

Try this and you will start loving your salads.


Ingredients

1 cup of boiled Black Eye Beans
1/2 cup chopped red onions
1/2 cup chopped mango
1/2 cup chopped tomatoes
1/2 cup chopped cucumber
2 tsp lemon juice.
A pinch of salt to taste
A pinch of chilli powder
A pinch of chaat masala (optional)
Coriander leaves

Method

Soak the beans overnight and cook them with a pinch of salt. Drain the excess water and your beans is all ready to be dressed up. Mix all the ingredients and garnish with coriander. This recipe serves two.

    Just a small suggestion: Do not drain the excess water after cooking the beans(anything). It drains away the nutrition. ஏதோ எனக்கு தெரிஞ்சது :-)
